Fathead Pizza

Gluten-Free Fathead Pizza Recipe


Shellee writes: "I’ve been wanting to try this recipe…glad I did! It’s easy to make and delicious! But keep in mind…it is not low calorie!!! It's Keto Friendly! Found the original recipe on https://thatlowcarblife.com/fathead-pizza/. I’ll include the recipe below as I made it:"

Ingredients

3 cups finely shredded low-fat mozzarella cheese
2 Tbsp cream cheese (I had whipped cream cheese in the house but whipped or regular would work fine)
1 egg
2/3 cup almond flour
Dried oregano, garlic powder, onion powder dried basil to taste (original recipe calls for 1 tsp Italian seasoning…I didn’t have any in the house)
1/3 cup of your favorite tomato sauce
1 onion, thinly sliced
1 tsp chopped garlic
(If you don’t like onion and/or garlic, use whatever toppings of your choice)

 

Directions


1.  Preheat oven to 425 degrees.
2.  Combine 2 cups mozzarella cheese and cream cheese in a microwave safe bowl and microwave for 1 minute. Stir and return to microwave until cheese has melted, about 30 seconds more.

 
3.  Stir in almond flour, egg and herbs to cheese mixture.
4.  Place dough on parchment paper. Cover with another piece of parchment paper and roll out to about 12” circle.


5.  Remove top piece of parchment paper and transfer to a pizza pan (leaving bottom parchment paper under pizza).
6.  Bake for 10 minutes or until lightly golden.


7.  Flip crust over carefully (it does hold together) and cook an additional 5 minutes (again on parchment paper).
8.  Remove crust from oven and place directly on pizza pan. Top with your favorite sauce, herbs, toppings and additional 1 cup of shredded mozzarella cheese.


9.  Bake another 12 minutes. Cool 3 minutes before slicing
