Chocolate Chip Nut Butter Blondies (Gluten-Free)

 

INGREDIENTS

1 15 oz can of chickpeas, rinsed and drained

½ cup creamy nut butter (any favorite nut butter)

¼ c maple syrup

¼ c coconut sugar

1 Tbsp almond milk (any milk either dairy or non-dairy is okay)

½ tsp sea salt

½ tsp baking powder

¼ tsp baking soda

½ c chocolate chips 

A little Cinnamon & Nutmeg … whatever you like (or none at all)

DIRECTIONS

1)  Preheat oven to 350 degrees.

2)  Put all ingredients except chocolate chips into blender or food processor.  Try to blend to a smooth consistency.

3)  After blending, stir in chocolate chips.

4)  Pour mixture into an 8 or 9-inch glass/non-stick baking pan (I used a glass pan so I didn’t have to grease it)

5)  Sprinkle additional chocolate chips on top.

6)  Bake for 25-30 minutes until edges pull away from pan and top is golden brown and set.

7)  Let cool for 15 minutes before cutting.  Actually, easier to chill first and then cut into blondies.  Can be frozen.

8)  Enjoy!

 

If you’d prefer to skip the chocolate chips (but why would you??), you can substitute with either nuts and/or raisins…or use all three.  I personally like chocolate chips!
